3 large red potatoes, peeled and cubed
3 cups thinly sliced medium rare beef steak
1/3 cup diced red bell pepper
1/3 cup diced yellow bell pepper
1/3 cup chopped red onion
1 scallion top, thinly sliced
2/3 cup Uncle Dan’s® Mediterranean Garlic dressing
1/3 cup chopped fresh parsley
16 ounces mixed lettuce
Zest of 1 orange
Cook the potatoes in boiling salted water to cover in a saucepan until tender: drain. Combine the potatoes, steak, bell peppers, onion and scallion in a large bowl. Pour the dressing over the steak mixture and toss gently to combine. Add the parsley and toss gently to combine.
Arrange the lettuce leaves on 4 plates. Spoon the steak mixture over the lettuce. Garnish with orange zest. Serve at room temperature.
